Thanks to a Waterdown farmer, people who like to cut down on their carbs no longer have to avoid potatoes.
There’s a new Waterdown-grown variety of potato that’s touted to have a lower glycemic response.
That means it doesn’t cause the rapid spike in blood sugar that normally comes from eating carbohydrate-rich foods.
Joanne Lewis, director of nutrition and diabetes education with the Canadian Diabetes Association in Toronto, says the new potato is a good option.
The new Carisma potato is being grown in Waterdown and will be available in limited quantities in select stores in Ontario this fall.
